Barbecue Pork

Ingredients:
  • 1 (5oz) bottle worcestershire sauce
  • 1 5-7 lbs pork butt roast
  • salt and pepper
Barbecue Sauce Ingredients:
  • 3/4 cup ketchup
  • 1/2 cup vinegar
  • 1/2 cup brown sugar
  • 3 Tbsp worcestershire sauce
  • 3 T/ vegetable oil
  • 2 Tbsp fresh lemon juice
  • 2 1/2 Tbsp chili powder
  • 2 tsp mustard
  • 1/4 tsp hot sauce, or to taste
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 small onion, minced
  • 2 garlic cloves, minced

Preparation:

SAUCE: Mix all ingredients for sauce. Place in a non-aluminum container, cover and refrigerate overnight.

PORK: Place pork butt roast in a slow cooker and pour worcestershire sauce over pork roast and season liberally with salt and pepper. Cook on low heat for 8 hours. You may cook this in a 350° oven, uncovered, for 2 1/2 hours or until meat is extremely tender and falls from the bone easily.

Remove meat from the bone, chop coarsely and combine with barbecue sauce. Either place back in the oven and reheat for 15-20 minutes or if cooked in slow cooker, place in pan on top of stove for 10 minutes on medium heat to combine the flavors.
