Bourbon Barbecue Baste For Poultry

Ingredients:
  • 2 Tbsp butter
  • 2 Tbsp onion, minced
  • 2 cloves garlic, minced or pressed
  • 6 oz. tomato paste
  • 1/2 cup bourbon whiskey
  • 1/2 cup water
  • 1/4 cup firmly packed brown sugar
  • 2 Tbsp Worcestershire
  • 1/2 tsp dried basil
  • 1/2 tsp sage
  • 1/2 tsp oregano
  • 6-8 drops of liquid hot sauce

Preparation:

In a 4 quart pan, melt butter over medium heat. Add onion and garlic and cook until onion is soft. Stir in tomato paste, bourbon, water, sugar, worcestershire, basil, sage, oregano and hot sauce. Reduce heat. Cover and simmer for 10-15 minutes. Brush over any poultry while they cook.
