Oven Barbecued Flounder

Ingredients:
  • 2 med. onions, sliced into thin rounds
  • 1 green pepper, cut into julienne strips
  • 4 feet of aluminum foil
  • canola oil cooking spray
  • 1/2 cup barbecue sauce
  • 1/4 cup parmesan and romano cheese, grated

Preparation:

Cut 4 one-foot square sheets of foil and spray with cooking spray.

Cut flounder into 4 oz. portions and place on foil. Top with sliced onion and green pepper. Add 2 Tbsp barbeque sauce and 1 Tbsp grated cheese on each portion. Bake at 350° F for 20 minutes.

Serve with rice pilaf, fresh carrots and corn muffins.
