Spicy BBQ Beef Sandwiches

Ingredients:
  • 3 lbs boneless beef chuck roast
  • 2 Tbsp cooking oil
  • 1 cup water
  • 2 1/2 cup ketchup
  • 1 can (15 oz.) tomato sauce
  • 1 cup green pepper, chopped
  • 1 cup onion, chopped
  • 1/4 cup fresh jalapeño peppers, chopped or 1 oz. diced green chili peppers, drained
  • 1/4 cup grape jelly
  • 2-4 Tbsp honey
  • 2 Tbsp worcestershire sauce
  • 1 1/2 Tbsp hot pepper sauce
  • 3 cloves garlic, minced
  • 1 Tbsp chili powder
  • 1/2 Tbsp pepper
  • 1/2 Tbsp ground cumin
  • 1 Tbsp liquid smoke (optional)

Preparation:

Trim fat from roast. Brown meat on all sides in hot oil in Dutch oven. Add water; bring to boiling and reduce heat. Simmer, covered, 1 1/2 to 2 hours or until meat is tender. Remove meat, cool.

Skim fat from meat juice and save broth for another use. Shred or chop meat; you should have about 5 1/2 cups. Place cooked meat, and all ingredients, except buns, in Dutch oven.

Bring to boiling, reduce heat. Simmer, covered, for 2-3 hours. Serve on hamburger buns. Makes 10-12 servings.
