South West Baked Beans

Ingredients:
  • 2 cans dark red kidney beans
  • 1 can black beans
  • 1 can white kidney beans
  • 1 can Italian plum tomatoes (drained & chopped - 28oz)
  • 1 cup chopped yellow onion
  • 2 to 4 large garlic cloves -- chopped
  • 1/4 cup dark molasses
  • 1/4 cup cider vinegar
  • 2 Tbsp honey
  • 2 tsp dried oregano
  • 2 tsp dried mustard
  • 2 tsp ground cumin
  • 1 1/2 tsp ground ginger
  • 1 tsp chili powder
  • 1 pinch crushed red pepper flakes
  • salt to taste

Preparation:

Preheat oven to 350° F.

Rinse and drain beans. Place in oven proof casserole.

Add remaining ingredients, folding gently so beans don't break up.

Bake, covered for 45 minutes. Remove cover; stir and bake, uncovered, 30 more minutes or until hot and bubbly.

Servings: 8-10
