Easy Beans and Rice #3

Ingredients:
  • 1 onion, diced
  • 1 can kidney beans, rinsed and drained
  • 1/4 cup (approx.) salsa and/or: ketchup, diced tomato, tomato paste and water
  • 1 cup cooked rice (leftovers, or instant)
  • 1 can corn, drained
  • 1-4 cloves garlic, minced, or garlic powder
  • 1 Tbsp (or more) chili powder
  • 1/2 Tbsp ground cumin (optional)
  • 1/4 tsp prepared mustard (optional)
  • 1 green, red, or yellow bell pepper, diced (optional)
  • 2-4 black olives, diced (optional)
  • a little water, if needed
  • salt & pepper
  • ff sour cream, for garnish (optional)

Preparation:

Mix all ingredients except rice and sour cream in a frying pan, and cook briefly on medium heat until all ingredients are warmed through.

Add cooked rice and cook for a few minutes to blend flavors. Garnish with sour cream (optional).
