Texas-Style

Ingredients:
  • 4 lbs beef brisket
  • Salt and pepper to taste
  • 2 cup red wine or red wine vinegar
  • 2 garlic cloves, crushed
  • 2 Tbsp cilantro, chopped

Preparation:

Trim as much fat off brisket as possible. Rub meat with salt and pepper. Marinade for 6 hours or overnight in red wine or red wine vinegar with crushed garlic, and chopped cilantro. Turn brisket once or twice during the marinade process. Remove from marinade and place on hot grill searing on both sides; remove from grill, place back in pan with marinade and cook in a 225° F oven for 2 hours. Remove from oven and wrap in heavy foil with some of the marinade with iTbsp Seal foil well so the juices will stay inside. Cook on medium grill for 11/2 hours. Carefully remove from foil saving as much juice as possible. Cool briefly and slice.
