Bourbon Flank Steak

Ingredients:
  • 1/2 cup plus 2 Tbsp soy sauce
  • 1/2 cup water
  • 1/2 cup bourbon
  • 3 Tbsp packed brown sugar
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp Worcestershire sauce
  • 2 garlic cloves, finely minced
  • Freshly ground pepper to taste
  • 1 (2 lbs) flank steak

Preparation:

Combine first 8 ingredients in a large zipper-style plastic bag, mixing well. Add the steak; seal bag securely, removing as much air as possible, and place in a large bowl. Marinate for 8 hours or overnight in refrigerator, turning occasionally.

Remove steak from marinade, reserving marinade.

Grill, uncovered, over medium-hot coals (350* to 400° F / 175* to 205*C) 5 to 6 minutes on each side or until desired doneness, basting occasionally with reserved marinade. Discard any remaining marinade.

To serve, slice steak diagonally across the grain into thin slices.
