Flank Steak with Teriyaki Marinade

Ingredients:
  • 2 lbs Flank steak
  • 3 Garlic cloves, cut Lengthwise into slivers
  • 2 Tbsp Fresh lemon juice
  • 2 Tbsp Soy sauce
  • 1 tsp Honey
  • 1/4 cup Olive oil

Preparation:

Make 1/4 inch slits in one side of the steak with a sharp paring knife held at a 45 degree angle, fill the slits with the garlic, and put the steak in a shallow dish large enough to hold it.

In a small bowl whisk together the lemon juice, soy sauce and honey, add the oil in a stream, whisking, and whisk the marinade until it is emulsified. Pour the marinade over the steak, turning the steak to coat it well, and let the steak marinate, covered, turning it occasionally, for 1 hour at room temperature and up to 10 hours chilled. Let the steak come to room temperature and discard the garlic before cooking it.

Remove the steak from the marinde, broil it on the rack of a broiler pan under a preheated broiler about 4 inches from the heat, turning it once, for 10 to 12 minutes for medium rare meat, and reserve any pan juices.

Alternatively, remove the steak from the marinde, reserving the marinade, and grill it on a oiled rack over glowing coals, brushing it occasionally with the reserved marinade and turning it once, for 10 to 12 minutes, and with a sharp knife held at a 45 angle slice it thin across the grain. Serve the steak with the reserved pan juices if broiled.
