Basic Corn Bread

Ingredients:
  • 1 1/4 cups yellow cornmeal
  • 3/4 cup flour
  • 1/4 cup granulated sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 2 eggs, lightly beaten
  • 1 1/4 cups milk

Preparation:

Mix dry ingredients. Add remaining ingredients and stir just until mixed (will probably still be lumpy). Pour into a greased cast iron skillet and bake at 400° F for 25 minutes.

Servings: 4 to 6
