Pumpkin Apple Bread

Ingredients:
  • 1/2 cup margarine (1 stick)
  • 1 1/2 cups granulated sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups canned pumpkin
  • 3 cups flour
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp each nutmeg, cloves and ginger
  • 1 1/2 cups apples, pared and diced (about 2 medium apples)

Preparation:

Preheat oven to 350° F.

Cream together butter and sugar.

Add eggs, vanilla extract and pumpkin. Mix.

Sift dry ingredients and add to pumpkin mixture.

Fold in apples and turn into a greased and floured 10-inch Bundt or angel food cake pan. Bake at 350° F for 50 to 60 minutes.

When done turn out on a rack to cool. Sprinkle with confectioners' sugar Servings:
