Alaskan Gold Rush Cake

Ingredients:
  • 1 1/2 cups granulated sugar
  • 2 cups coffee
  • 2 cups raisins
  • 1 cup (2 sticks) margarine
  • 1 tsp salt
  • 1 tsp cloves
  • 2 tsp cinnamon
  • 2 eggs, beaten
  • 3 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 cup brown sugar
  • 1 Tbsp butter
  • 1/3 cup milk
  • 3 Tbsp shortening
  • 1/4 tsp salt
  • nuts (optional)
  • 1 1/2 cups confectioners' sugar

Preparation:

Boil sugar, coffee, raisins, margarine, salt, cloves and cinnamon together until the margarine melts. Set aside to cool overnight.

The next day, add eggs, flour, baking soda and vanilla extract. Bake in a large greased and floured 13 x 9-inch pan for 30 to 40 minutes at 350° F.

When the cake is cool, combine the brown sugar, butter, milk, shortening, salt and nuts, if desired. Boil for 3 minutes. Remove from heat and mix in the confectioners' sugar.
