Amalgamation Cake

Ingredients:
  • 1 cup granulated sugar
  • 3/4 cup butter
  • 1/2 cup buttermilk
  • 2 cups plain flour
  • 1/2 cup raisins, ground
  • 1/2 cup pecans, chopped
  • 3/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 pint blackberry jam
  • 8 egg whites (yolks go in the frosting)
Frosting Ingredients:
  • 8 egg yolks
  • 1 cup granulated sugar
  • 1/4 cup butter
  • 1 cup pecans, chopped
  • 1 cup coconut
  • 1 cup raisins, ground
  • 1 1/2 Tbsp cream

Preparation:

Cream the butter and sugar. Add the jam, spices, buttermilk and baking soda. Add the flour and mix until blended. Fold in stiffly beaten egg whites.

Turn into three 8- or 9-inch can pans that have been greased, lined with wax paper and grease and flour the wax paper. Bake at 350° F for 35-40 minutes.

Frosting Preparation:

Mix all ingredients and cook in a double boiler for 15 minutes. Add a little cream to thin if it gets too thick.
