Red Velvet Cake #2

Ingredients:
  • 1/4 lbs butter or margarine, softened
  • 1 1/2 cup sugar
  • 3 large eggs
  • 1 tsp baking soda
  • 1 cup buttermilk
  • 2 Tbsp unsweetened cocoa
  • 1 Tbsp red food coloring mixed with 1 tsp vanilla
  • 2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1 Tbsp cider vinegar

Preparation:

With electric mixer, cream together butter and sugar until ligh Tbsp Add eggs one at a time, and continue to bea Tbsp Add baking soda to buttermilk.

Alternately, add cocoa, food coloring mixture, flour, salt, baking powder mixture, and buttermilk mixture to batter. When batter is well mixed, add vinegar. With spatula, transfer to 2 lightly greased 9-inch cake pans and bake at 350° about 25 minutes. Remove from pans; cool on wire racks.

Cream Cheese Frosting: Cream together butter and cream cheese; add vanilla and confectioner's sugar, mixing well. Frost cool cake layers.
