Cocoa Rum Balls

Ingredients:
  • 3 1/4 cups vanilla wafer crumbs
  • 1 1/2 cups chopped nuts
  • 3/4 cup powdered sugar
  • 1/4 cup unsweetened baking cocoa
  • 1/2 cup light rum
  • 3 Tbsp light corn syrup
Coating Ingredients:
  • Unsweetened cocoa powder, or powdered sugar, or a combintion of both

Preparation:

Combine wafer crumbs, nuts, powdered sugar and cocoa in a large bowl. Stir in rum and corn syrup and mix well.

Shape into 1-inch balls and roll in desired coating.

Store in airtight container 2 to 3 days to for flavors to marry. Reroll in desired coating before serving.

Makes: about 4 dozen balls
