Asparagus & Wild Rice Casserole

Ingredients:
  • 2 Tbsp chopped onion
  • 1 Tbsp butter
  • 1 Tbsp flour
  • 1/8 tsp salt
  • 1 cup milk
  • 1/2 cup sour cream
  • 2 cups cooked wild rice
  • 2 lbs asparagus; cut into 2 inch pieces and cooked
  • 3/4 cup shredded cheddar cheese
  • 6 slice bacon; diced & cooked

Preparation:

Preheat oven to 350° F. Grease an 11x7x2" baking dish.

Fry onion in butter until tender. Stir in flour and salt until smooth; add milk and cook until thickened. Cook 1 minute more. Remove from heat; stir in sour cream.

Place wild rice in baking dish. Top with asparagus, sauce, cheese and bacon. Bake 30 minutes.
