Pastitsio

Ingredients:
  • 8 oz. macaroni - uncooked
  • 1 Pound extra lean ground beef
  • 1 medium onion - chopped
  • 1 clove garlic - minced
  • 16 oz. tomato sauce
  • 1/2 tsp oregano
  • 1/4 tsp pepper
  • 3/4 cup parmesan cheese
  • 2 Tbsp margarine
  • 2 Tbsp flour
  • 1/8 tsp pepper
  • 1 1/2 cups milk
  • 1 large egg
  • 1/4 cup parmesan cheese

Preparation:

Cook pasta, drain and set aside. In a large skillet, cook meat, onion, and garlic until meat is brown. Drain fat.

Stir in tomato sauce, oregano, and pepper. Cook, covered about 5 minutes.

Remove from heat, stir in 3/4 cup of parmesan cheese.

Layer half of the pasta in an 8x8 baking dish. Top with meat mixture, then remaining pasta.

For the sauce, in a medium saucepan melt margarine.

Stir in flour and pepper until blended. Add milk all at once. Cook and stir over medium heat until the mixture is thickened and bubbly.

Stir one cup of the mixture in with a beaten egg.

Return the egg mixture to saucepan with the rest of the mixture.

Cook and stir for two minutes. Stir in remaining parmesan cheese.

Pour all over the pasta layer.

Bake uncovered at 350° for 30 minutes.

Top with parmesan cheese. Let stand 10 minutes before serving.
