Eggplant Casserole

Ingredients:
  • 1 lbs eggplant cut into 1 in cubes
  • 1 lbs zucchini (ditto)
  • 1 lbs plum tomatoes (ditto)
  • 1 onion (ditto)
  • 2 stalks celery
  • 1 4 oz. can tomato paste
  • 1 Tbsp red wine vinegar
  • 1 Tbsp brown sugar (I leave this out)
  • 1/4 cup raisins
  • 2 cup cooked black beans

Preparation:

Mix cook on low 3.5 hours or high 5 hours.

Add capers and black olives at end (if you'd like - I didn't). Yummy!
