Rice Casserole

Ingredients:
  • 2 cups rice
  • 1 cup cheese - grated
  • 1 onion - chopped
  • 2 tomatos - sliced 1/4 thick
  • 1 yellow squash or zucchini - sliced 1/4 thick
  • 1 cup sour cream or Greek yogurt

Preparation:

I got this recipe off the side of a Lundberg rice mix if you make it with the Lundberg's, I recommend using less water than they call for.

Cook rice.

Put rice on the bottom of a 9x12" baking dish.

Top with chopped onion and grated non-fat cheese.

Layer on 2 good-sized sliced tomatoes. You can also use sliced yellow squash or zucchini.

Top with non-fat sour cream or yogurt.

Bake at 350° For 30 minutes.
