Corn Chowder #4

Ingredients:
  • 3 Tbsp margarine
  • 1 cup ham diced
  • 1.2 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 1/2 cup celery, chopped
  • 1 14 oz. can chicken broth
  • 1 15 oz. can potatoes or 2 lg., cooked
  • 1 16 1/2 oz. can golden corn, drained or frozen corn
  • 1 16 1/2 oz. can creamed corn
  • 1 2 oz. jar sliced pimentos, drained. 1/2 Tbsp heavy cream
  • 1 cup Cheddar cheese, shredded
  • salt and pepper to taste

Preparation:

Melt butter in large saucepan. Sate ham, onion, celery and green pepper until onions are transparent Slice potatoes and add along with chicken broth, corn and pimentos.

Simmer 5 minutes. Stir in cheese until melted and add cream; salt and pepper to taste.
