Manhattan-Style Crock Pot Clam Chowder

Ingredients:
  • 1/4 lbs diced bacon, fried & drained
  • 1 large onion, diced
  • 2 carrots, thinly sliced
  • 3 celery with leaves, thinly sliced
  • 1 Tbsp fresh parsley (or dried)
  • 1 large can tomatoes, broken up, with juice
  • 1-1/2 tsp salt
  • Black pepper
  • 1 leaf
  • 1 tsp thyme
  • 3 potatoes, diced
  • 2 cans clams with juice

Preparation:

Put all ingredients in crock pot. Stir to blend. Cover and cook on high for 1 hour, then on low for 8 hours.
