Black-Bean Dip

Ingredients:
  • This easy dip is perfect for a football party or as a sandwich spread.

      2 15-oz. cans black beans
    • 2 tsp chopped garlic
    • 2 Tbsp chopped fresh cilantro (or 1 Tbsp dried)
    • 2 small tomatoes, chopped and divided
    • 2 tsp crushed red pepper (or to taste)
    • 1 tsp cumin
    • Juice of 1 lime
    • 2 green onions, chopped
    • Salt and pepper, to taste

Preparation:

In a food processor, coarsely chop the black beans, garlic, cilantro, and one of the chopped tomatoes. Transfer to a serving bowl.

Top with the red pepper, cumin, lime juice, onions, and remaining chopped tomato and season with the salt and pepper.

Chill for 3 to 4 hours before serving.
