Hash and Eggs Bake

Ingredients:
  • 4 eggs, beaten
  • 2 cup Cheddar cheese, shredded
  • 3/4 cup small curd cottage cheese
  • 1 - 4 oz. can diced green chilies
  • 1/4 cup onion, chopped
  • 1/4 cup red bell pepper, chopped
  • 1 - 15 oz. can corned beef hash
  • 1/3 cup fine dry bread crumbs
  • Salsa

Preparation:

Heat oven to 375° F. In bowl combine eggs, shredded cheese, cottage cheese, green chilies, onion and bell pepper. In another bowl, combine hash with one cup of the egg mixture. Stir dry bread crumbs into hash. Place hash mixture into a lightly greased 9-inch baking dish. Top with remaining egg mixture.

Bake for 40 minutes or until se Tbsp Serve with salsa.
