Avocado Relish

Ingredients:
  • 1/2 medium Avocado (about 1/4 lbs),
  • 1 Tbsp Each chopped fresh cilantro-pared; finely diced-or parsley; seeded mild
  • 2 Tbsp Lime juice (no sugar added)-or hot
  • 1/4 cup Each diced red onion, red
  • Chili pepper-bell pepper, and green bell
  • 2 small Cloves garlic, chopped-pepper
  • 2 tsp Olive or vegetable oil
  • 2 large Plum tomatoes, diced
  • 1 dash salt and pepper

Preparation:

In small bowl, combine avocado and lime juice; set aside. In separate bowl combine remaining ingredients, mix well; carefully fold into avocado mixture.

Cover with plastic wrap and refrigerate until flavors blend, at least 30 minutes. Just before serving, stir well. A nice addition to broiled chicken or fish.

Servings: 4 - 1/2 cups
