Cajun Red Bean Relish

Ingredients:
  • 3 Shallots
  • 1 Tbsp Minced parsley
  • 2 Tbsp Wine vinegar
  • 5 Tbsp Salad oil
  • 2 cup Red beans, cooked, cold
  • Salt & pepper to taste

Preparation:

Chop shallots fine, including tops. Add parsley, vinegar, and oil and season to taste. Pour over beans and pack in jars.
