Cranberry and Cinnamon Relish

Ingredients:
  • 1 lbs Onions; halved and sliced
  • 2 Tbsp Vegetable oil
  • 3 Tbsp Brown sugar
  • 9 oz. Cranberries
  • 2 Tbsp Redcurrant jelly
  • 1 Cinnamon stick

Preparation:

Gently cook the onions in the oil and sugar for about 20 mins, until soft ad caramelised. Add rest of the ingredients with a quarter pint of water and seasoning.

Simmer for about 10 mins until the cranberries are soft. Taste and add more sugar if required. Serve warm.
