Zucchini Jam

Ingredients:
  • 6 cup grated zucchini
  • 1 cup water
  • 6 cup sugar
  • 1 cup crushed pineapple, well drained
  • 2 Tbsp fresh lemon juice
  • 2 pkgs. - 3 oz. apricot gelatin

Preparation:

In large heavy kettle combine zucchini and water. Cover and bring to a boil and cook 6 minutes. Stir in remaining ingredients. Return to heat and simmer 6 minutes more. Pour into sterilized jars. Seal.
