Basic Marinade for Barbecued Spareribs

  • 1 Clove garlic
  • 3 slice Fresh ginger root
  • 1 cup Soy sauce
  • 1 Tbsp Sugar
  • 1 Tbsp Sherry image placeholder

Crush garlic and ginger root; then combine with remaining ingredients.

Add to spareribs and marinate. VARIATIONS: Rub the spareribs first with 1 teaspoon salt and 1 teaspoon sugar. Let stand 1 hour; then marinate.

Reduce the soy sauce to 3/4 cup; increase the sherry to 1/4 cup.

Reduce the sugar to 1 teaspoon and add 1/2 teaspoon Five Spices. For the sherry, substitute brandy.

Add 2 tablespoons honey and 2 tablespoons of either hoisin sauce or applesauce.
