Chick-Peas and Olives Vinaigrette

Ingredients:
  • 1 Tbsp Olive oil
  • 1 tsp White-wine vinegar
  • 1 tsp Dijon mustard
  • 1 can (16- to 19-oz) chick-peas;rinsed and drained
  • 1 Jar; (3-oz) pimiento-stuffedolives (about 1/2 cup),drained and sliced
  • 1 Tbsp Minced fresh parsley leaves
  • Freshly ground black pepper

Preparation:

Can be prepared in 45 minutes or less. In a bowl whisk together oil, vinegar, and mustard. Add chick-peas, olives, parsley, pepper, and salt to taste and toss to combine.
