Balsamic Vinaigrette

Ingredients:
  • 3 Tbsp aged balsamic vinegar
  • 1 Tbsp Dijon mustard
  • Pinch of garlic
  • 2 Tbsp extra-virgin olive oil
  • 3 Tbsp canola oil
  • Pepper, to taste
  • 1 Tbsp fresh basil, finely chopped

Preparation:

In a small bowl, combine the balsamic vinegar, mustard and garlic. Using a whisk, mix until blended.

In a slow, steady stream, add the oils, one at a time, while blending with a whisk, until the vinaigrette is smooth and emulsified.

Season with pepper and stir in the basil.
