Mint & Caramelized Shallot Salsa

Ingredients:
  • 10 shallots, peeled - thinly sliced
  • 1 Tbsp fresh ginger, grated
  • 1/4 cup fresh mint, minced
  • 1/2 cup minced fresh pineapple
  • 2 Tbsp pineapple juice
  • 1 Tbsp minced Thai red chiles or 1 1/2 tsp minced red serranos
  • 3/4 Tbsp sugar
  • 1 Tbsp soy sauce
  • 2 Tbsp unseasoned rice wine vinegar

Preparation:

Sauté shallots in water until browned, about 10 min. Cool. Mix with the remaining ingredients.
