Tricolor Salsa

Ingredients:
  • 1/2 cup red bell pepper, seeded - finely diced
  • 1/2 cup yellow bell pepper, seeded - finely diced
  • 4 Tbsp minced serrano chile, seeded
  • 1/3 cup apple cider vinegar
  • 1/4 cup finely chopped fresh cilantro
  • 2 Tbsp minced shallot
  • 2 Tbsp fresh lime juice
  • 1 1/2 Tbsp sugar
  • 1/4 Tbsp salt
