Buttery Broccoli Mashed Potatoes

Ingredients:
  • 2 lrg baking potatoes, unpeeled and quartered
  • 2 1/2 cup sm fresh broccoli florets
  • 1 sm onion, chopped
  • 2 Tbsp nonfat cream cheese
  • 1 Tbsp butter
  • 1/8 tsp salt
  • pepper to taste

Preparation:

Place potatoes in large saucepan; add water to cover. Over medium high heat bring to a boil. Reduce heat; cover and simmer until tender. Meanwhile, in medium pot add broccoli and onion and enough water to cover. Bring to a boil over medium high heat. Reduce heat; cover and simmer 10 to 12 minutes until tender. Drain potatoes and vegetables well. In large bowl mash potatoes, leaving skins on, until roughly mashed. Blend in cream cheese, butter, salt and pepper to taste. Fold in broccoli florets and onions; serve.
