Cottage Creamed Pearl Onions and Carrots

Ingredients:
  • 1 cup cream-style large curd cottage cheese
  • 1 cup sour cream
  • 2 1/2 Tbsp all-purpose flour
  • 1 lbs carrots, peeled, cut into 3/4 inch pieces
  • 1 - 16 oz. package frozen pearl onions
  • 1 Tbsp each chopped fresh savory, thyme and sage leaves or 3/4 tsp dried
  • Salt
  • Freshly ground black pepper

Preparation:

Combine cheese, sour cream and flour in blender container. Cover and process on high until smooth.

In large bowl, combine cottage cheese mixture with remaining ingredients. Toss well. Pour into buttered 1 quart baking dish.

Bake at 375° F - (190°C) for 1 hour.

Remove cover. Bake 30 minutes longer or until carrots are tender.
