Wisconsin Pepato and Carrot Bake

Ingredients:
  • 3 cups cooked, mashed carrots
  • 3 large eggs, lightly beaten
  • 2 cups milk
  • 1 1/4 cups - 4 oz. shredded pepato cheese
  • 1 cup breadcrumbs
  • 2 Tbsp unsalted butter, melted
  • Salt, to taste
  • 1 tsp prepared horseradish
  • 1/4 cup chives, finely chopped

Preparation:

Preheat the oven to 350° F.

Coat a 9 x 9-inch baking pan with cooking spray. Set aside.

In a large bowl, combine the ingredients. Transfer to the pan.

Bake for about 30 minutes, or until a knife inserted in the center comes out clean.
