Gazpacho #2

Ingredients:
  • 2 Green peppers, seeded
  • 2 Red peppers, seeded
  • 1 Red onion
  • 2 Tomatoes, peeled and seeded
  • 2 Cloves garlic, chopped
  • 2 cup Spicy tomato juice
  • 2 Tbsp Olive oil
  • 1 Tbsp Red wine vinegar
  • 2 tsp Lemon juice
  • 2 Tbsp Dill, chopped
  • 2 Tbsp Basil, chopped
  • Salt and pepper
  • Croutes for garnish

Preparation:

In a food processor or blender, combine peppers, onions, tomatoes, and garlic.

Purée to desired consistency. Add tomato juice, oil, vinegar, lemon juice, herbs, salt and pepper. Chill and garnish with croutes.
