Sweet Potatoes with Orange, Nuts and Sherry

Ingredients:
  • 4 cooked sweet potatoes
  • 1 Tbsp cornstarch
  • 1/4 tsp Salt
  • 1 cup orange juice
  • 1/4 cup raisins
  • 1/4 cup butter
  • 3 Tbsp sherry
  • 2 Tbsp chopped walnuts
  • 1/2 Tbsp grated orange peel

Preparation:

Cut cooked sweet potatoes in lengthwise pieces Mix potatoes with all remaining ingredients and place in a 1 1/2 qt casserole dish.

Cover and bake 350° For 20 minutes or hot and bubbly.
