New England Baked Beans


  • 4 cups of cooked beans - (2 cups dry, you can use a mix** or all navy beans)
  • 1/2 onion, chopped
  • 1 carrot, grated
  • 1 apple grated
  • 1 tsp salt
  • 1 tsp dry mustard
  • 1/2 cup ketchup
  • 3/4 cup vegetable stock or water


Preheat oven to 350° F.

Sauté onion in oil for 3 minutes. Add apples, carrots and cook over low heat for 5 minutes. Mix with remaining ingredients and put in casserole.

Bake, covered, 45 minutes.

NOTE: **Navy, pinto or kidney beans can be mixed
