Beans Cubano

Ingredients:

  • 1 large green pepper, coarsely chopped
  • 1 tsp minced garlic
  • 2 cans - 16 oz undrained black beans
  • 1 jar - 4 oz sliced pimientos
  • 3 Tbsp red wine vinegar
  • 1/2 tsp oregano

Preparation:

Sauté pepper and garlic in liquid of your choice 3-5 mins, until' tender-crisp. Stir in remaining ingredients, bring to boil, simmer 5-7 mins., till tender.

Serve with rice.
