Red Earth Cake

Cake Ingredients:
  • 1 1/2 cup sugar
  • 1/2 cup shortening
  • 2 well-beaten eggs
  • 2 cup minus 2 Tbsp flour
  • 1/4 tsp salt
  • 1 tsp soda
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 4 Tbsp cocoa
  • 1 tsp McCormick red food coloring
  • 2 Tbsp brewed coffee
Icing Ingredients:
  • 1 (16.oz.) box powdered sugar
  • 4 Tbsp cocoa
  • 4 Tbsp brewed coffee
  • 1 tsp vanilla
  • McCormick red food coloring
  • 1/4 lbs butter, softened

Preparation:

Cake: Cream sugar and shortening; add well-beaten eggs. Then add flour in which has been added salt and soda. Add milk and vanilla. Make a paste of cocoa, food coloring, and coffee; add to batter.

Bake in 2 prepared round cake pans at 350° F or 25 minutes. Icing: Mix all ingredients together until smooth. Spread on cooled cake.
