Asparagus & Wild Rice Casserole
- 2 Tbsp chopped onion
- 1 Tbsp butter
- 1 Tbsp flour
- 1/8 tsp salt
- 1 cup milk
- 1/2 cup sour cream
- 2 cups cooked wild rice
- 2 lbs asparagus; cut into 2 inch pieces and cooked
- 3/4 cup shredded cheddar cheese
- 6 slice bacon; diced & cooked
Preheat oven to 350° F. Grease an 11x7x2" baking dish.
Fry onion in butter until tender. Stir in flour and salt until smooth; add milk and cook until thickened. Cook 1 minute more. Remove from heat; stir in sour cream.
Place wild rice in baking dish. Top with asparagus, sauce, cheese and bacon. Bake 30 minutes.Servings: 4
