Lima Bean Casserole

Ingredients:

  • 2 cup fresh lima beans
  • 1/2 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 1/4 cup margarine, melted
  • 1 can cream of celery soup
  • 1/2 cup Cheddar cheese, shredded
  • 1/3 cc. round buttery cracker crumbs

Preparation:

Cook beans in boiling water 15 to 20 minutes or until tender; drain well. Sauté onion and green pepper in margarine in a small skillet until tender.

Add soup and onion mixture to beans. Pour into a lightly greased 1-quart baking dish. Bake, uncovered, at 350° F or 25 minutes. Combine cheese and cracker crumbs and spread over casserole; bake another 10 minutes.
