Blueberry Cheesecake Bars

  • 1 pkg. Duncan Hines Bakery Style Blueberry Muffin Mix
  • 1/4 cup butter or margarine, softened
  • 1 (8 oz. pkg.) cream cheese
  • 1 egg
  • 1 tsp grated lemon peel
  • 1/3 cup finely chopped pecans
  • 1/2 cup sugar
  • 3 Tbsp lemon juice image placeholder

Preheat oven to 350° F.

Grease 9" square pan. Rinse blueberries from Mix with cold water and drain.

Place muffin mix in medium bowl. Cut in butter with pastry blender or two knives. Stir in pecans.

Press into bottom of prepared pan and bake 15 minutes or until set.

Combine cream cheese and sugar in medium bowl. Beat until smooth.

Add egg, lemon juice and lemon peel, and beat well. Spread over baked crust Sprinkle with blueberries.

Sprinkle topping packet from Mix over the blueberries. Return to oven and bake for 35 to 40 minutes or until filling is set.

Cool completely. Refrigerate until ready to serve. Cut into bars.

Servings: about 16 bars
