African Chicken Livers

Ingredients:

  • 2 Tbsp oil
  • 1 largeg Onion; chopped
  • 2 cloves garlic; chopped
  • 1 tsp fresh ginger; grated
  • 1 lbs chicken livers; cut in bite sized pieces
  • 1 Tbsp flour
  • 2 Tbsp roasted peanuts; ground
  • 1 large tomato; peeled & chopped
  • 3/4 tsp basil
  • 1 cup chicken stock or water
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1 tsp fresh chili; chopped
  • black pepper
  • 8 oz. spaghettini; cooked
  • 2 hard boiled eggs; quartered

Preparation:

Sauté onion, garlic & ginger until lightly browned. Add liver & cook 2 minutes. Sprinkle with flour, cook until slightly browned. Stir in peanuts and cook another 2 minutes.

Add tomato & basil; sauté 2 minutes. Stir in stock, coriander, salt, chili & pepper. Simmer, covered, 5 minutes.

Arrange pasta on heated platter & top with liver mixture. Garnish with eggs and serve.
