Black Bottom Cupcakes

Ingredients:

  • 8 oz. cream cheese
  • 1 cup sugar
  • 1 egg
  • 1/2 tsp salt
  • 1/3 cup sugar
  • 1/4 cup cocoa
  • 6 oz. chocolate chips
  • 1 cup water
  • 1 1/2 cup flour
  • 1 Tbsp vinegar
  • 1 tsp baking soda
  • 1 tsp vanilla

Preparation:

Combine cream cheese, egg, sugar,. Beat well and set aside after stirring in 6 oz. chocolate chips. Sift together flour, baking soda, sugar, salt and cocoa.

Add the water, vinegar, and vanilla. Beat well. Fill muffin cups 1/3 full with chocolate batter. Top each with a heaping spoonful of cheese mixture. Bake at 350° F or 25 - 30 minutes.

Servings: 2 dozen cupcakes
