Apricot Whip

Ingredients:
  • 1 1/2 cups dried apricots
  • 1 1/2 cups plain yogurt
  • 2 Tbsp honey
  • 2 Tbsp finely chopped pecans

Preparation:

Pour boiling water over apricots and soak for about a half hour.

Drain and combine the apricots with the other ingredients in a food processor. Process until a smooth consistency is reached.

Chill and serve with pecans sprinkled over each serving.

Makes 6 - 1/2 cups
