Danny Kaye's Roast Duck With Orange Sauce

Ingredients:

  • 5 lbs duckling
  • 1 anise oil
  • 1 stuffing
  • 3 cup white rice
  • 1/2 lbs sausage
  • 1 celery stalk, chopped fine
  • 1 small onion, chopped fine
  • 8 oz. crushed pineapple, drained
  • 3/4 drop anise

Preparation:

Wash duckling, and wipe dry. Rub inside and out with Anise oil. Let stand for 1 hour. Steam or cook rice until tender. Fry sausage, celery and onion until onion is golden. Drain excess grease off.

Add to rice. Drain pineapple. Add pineapple and anise drops to rice. Stuff duck and fasten with skewers. Roast at 350° F for 2 & 1/2 hours, or until tender.
