Dove, Quail or Wood Duck

Ingredients:

  • 1 4 to 5 lbs duck
  • Flour
  • 1 Tbsp Butter per dove (up to 2)
  • Salt & Pepper to tatse
  • Wine to taste

Preparation:

Preheat oven to 350° F. Dredge duck in flour seasoned with salt & pepper.

Sauté in cast iron skillet in butter about 15 minutes. Transfer to casserole dish. Pour wine into butter and heat through.

Pour over dove to a depth of about 1/4". Bake 30 minutes. If it appears to be drying out, partially cover with foil.
