Chile-Pear Relish

Ingredients:
  • 2-1/2 lbs Fresh pears; peeled, coredand sliced
  • 1 cup Brown sugar; firmly packed
  • 3/4 cup Cider vinegar
  • 5 Tbsp Chpped onion
  • 1 tsp Salt
  • 1 tsp Chile powder
  • 1/4 tsp Cumin
  • 2 Tbsp Chpoped pimiento
  • 4 Tbsp Chopped green anaheim chiles
  • 1 Serrano chile; seeded & finely chopped

Preparation:

Place all ingredients in a heavy saucepan; stir to blend. Cover and cook the mixture over low heat for 30 minutes, adding an additional 1/4 cup water if necessary.

Uncover and continue cooking for about 25 minutes or just until the mixture is thickend, stirring frequently.
