Frozen Strawberry Jam

Ingredients:

  • 2 cup mashed strawberries
  • 1 Tbsp lemon juice
  • 4 cup sugar
  • 1 package powdered pectin
  • 1 cup water

Preparation:

Combine fruit, lemon juice, and sugar. Let stand 20 minutes, stirring occasionally. Boil pectin and water rapidly for 1 minute, stirring constantly.

Remove from heat. Add berries and stir 2 minutes, until mixture begins to thicken. Pour into containers and cover. Let stand at room temperature for 1 hour.

Refrigerate until set. Store in freezer. Keep in refrigerator after opened.
